I have only done a YFZ-
I used masking tape on the fender, drew a line where I wanted to cut, changed it a couple of times, cut it with a jig saw, then smoothed it with a cheese grater type wood plane. Sorry for a YFZ pic:

i used a jig saw with a blade especially for plastic. i didnt have to sand the edges at all. they came out smooth and shiny.
how much comes of is entirely up to you. you do know that you can take just the fenders off, right? thats probably what most duners do. mx guys tend to leave a short fender, and xc guys dont trim at all.
